Waffles with Apple Cider Syrup

Ingredients
  

  • Waffles:
  • 2 c. all-purpose flour
  • 2 tsp. baking powder
  • 1/2 tsp. salt
  • 3 tsp. sugar
  • 3 large eggs-separated
  • 1 c. milk
  • 4 Tbsp. vegetable oil
  • Apple Cider Syrup:
  • 1 c. sugar
  • 2 Tbsp. cornstarch
  • 1/2 tsp. cinnamon
  • 1/4 tsp. nutmeg
  • 2 c. apple juice

Method
 

  1. For the waffles, in a large bowl, stir together flour, baking powder, salt, and sugar. Carefully separate the egg yolks from the whites, placing the yolks in the bowl with the flour mixture and the whites in a separate bowl. Whip egg whites with an electric mixer until fluffy peaks form. Next, add milk and oil to the flour and egg yolk bowl and mix well with an electric mixer. Fold in egg whites using a spatula. Don't over do it with the folding. You'll want to still see bits of fluffy eggs white peeking through the batter. Cook to liking using a waffle maker (my favorite is Lagrange!).
  2. For the syrup, in a small sauce pan, whisk together sugar, cornstarch, cinnamon and nutmeg until combined. Pour in apple juice and whisk until sugar mixture is dissolved. Turn on stove top to medium-high heat and allow it to come to a complete boil, stirring occasionally. Syrup will thicken as it boils and as it stands. Serve warm, over waffles.
