1/2lb.taco meatprepared (cook and crumble hamburger, drain, and season with taco seasoning, then cool to room temperature)
8oz.cream cheesesoftened
1/4c.sweet corn kernels
1/2c.pepper jack cheese
1/4c.cheddar cheese
1/4c.black beansrinsed and drained
1/4c.diced tomatoes and green chilesfrom the can, drained
2Tbsp.mild salsa verdegreen salsa
Method
Stir all ingredients together in a bowl, spread about 1/3 c. of mixture in the middle of a flour tortilla, leaving about 1 1/2" all around. Roll up and slice into rounds. Refrigerate until ready to eat.
