A Yummy Back to School Lunch Idea: Taco Roll Ups!

Ingredients
  

  • 1/2 lb. taco meat prepared (cook and crumble hamburger, drain, and season with taco seasoning, then cool to room temperature)
  • 8 oz. cream cheese softened
  • 1/4 c. sweet corn kernels
  • 1/2 c. pepper jack cheese
  • 1/4 c. cheddar cheese
  • 1/4 c. black beans rinsed and drained
  • 1/4 c. diced tomatoes and green chiles from the can, drained
  • 2 Tbsp. mild salsa verde green salsa

Method
 

  1. Stir all ingredients together in a bowl, spread about 1/3 c. of mixture in the middle of a flour tortilla, leaving about 1 1/2" all around. Roll up and slice into rounds. Refrigerate until ready to eat.
