Taco Roll Ups Back to School Lunch Idea

We’ve been having the best summer! Sure, there have been a few set backs (like two broken bones), but that hasn’t kept us from playing hard, traveling, and swimming up a storm! It’s been a very memorable one, for sure! 🙂

The kids are gearing up to head back to school in a few weeks. Though it’s hard seeing the summer break come to an end, they’re looking forward to reuniting with friends and learning new things with their new teachers!

We have a special back-to-school tradition where I shop with the kids and they get to choose a new “first day of school” outfit, shoes, and supplies such as a backpack and lunch box. I know the kids look forward to it each year.

My daughter will be starting kindergarten this time around, so she was especially excited to select the perfect lunch box to take to school! When I showed her this one from PackIt, she immediately knew it was meant to be hers! Go here to check out more styles and patterns!

I’m pretty sure she was drawn to the cute triangles and bright colors. 🙂 I love that the entire bag is freezable, so I simply collapse it and put it in the freezer the night before (for about 12 hours), then pull it out in the morning when I’m prepping lunches. I don’t have to even add ice packs, because the built-in gel walls freeze and keep the food and drinks chilled for hours, just like a mini refrigerator!

My kiddos love tacos (what kid doesn’t?), so I thought it would be fun to make a more portable version that could go in their PackIt lunch boxes with them to school! These are so yummy and a great way to put a smile on the kids’ faces when they open that box. I think your kiddos are going to love these too! Dip them in salsa or eat them just as they are…you can’t go wrong!

A Yummy Back to School Lunch Idea: Taco Roll Ups!

Ingredients
  

  • 1/2 lb. taco meat prepared (cook and crumble hamburger, drain, and season with taco seasoning, then cool to room temperature)
  • 8 oz. cream cheese softened
  • 1/4 c. sweet corn kernels
  • 1/2 c. pepper jack cheese
  • 1/4 c. cheddar cheese
  • 1/4 c. black beans rinsed and drained
  • 1/4 c. diced tomatoes and green chiles from the can, drained
  • 2 Tbsp. mild salsa verde green salsa

Instructions
 

  • Stir all ingredients together in a bowl, spread about 1/3 c. of mixture in the middle of a flour tortilla, leaving about 1 1/2" all around. Roll up and slice into rounds. Refrigerate until ready to eat.

    Such a great lunch idea! My little guy has turned picky on me and doesn’t eat sandwhiches anymore so this is something i’ll have to try. And I love the cute little lunch pack. Fits everything perfectly!

    These taco roll ups look like they would be such a great lunch. My kids always tend to get put with a sandwich, so this would switch it up!

    We saw those lunch boxes at Target! They are so cute! And what a great lunch idea! This is my first year of making school lunches so I need all the ideas I can get!

      They are the cutest lunch boxes! We love the patterns and colors! It's always a challenge coming up with lunches that the kiddos won't tire of, but this is a yummy idea to put into the rotation!
