Heat griddle over stove top on medium heat. Grease it to prevent the toast from sticking.
In a shallow bowl, beat eggs with a fork. Beat in milk, vanilla and cinnamon with the fork. In a separate bowl, spread out chopped pecans.
Dip both sides of the bread in the egg mixture, then transfer it to the pecan bowl and press each side of the bread into the pecans so they coat it.
Place bread on griddle and allow it to cook on one side until done, or about 4 minutes, then flip and allow the other side to cook for about the same amount of time until done. Keep the heat on low and let it cook slowly so the pecans won't burn.
