Preheat oven to 350 degrees Fahrenheit and line cookie sheets with nonstick baking mats or lightly spray with nonstick cooking spray.
In the bowl of an electric mixer, cream together softened butter, brown sugar, granulated sugar, creamy peanut butter, eggs, and vanilla.
In a separate bowl, whisk together flour, baking soda, and salt. Add flour mixture to wet mixture and mix just until incorporated.
Stir in chopped Mini Cadbury Eggs.
Form or scoop dough into 1 1/2" balls and place at least 2" apart on prepared cookie sheets. Press the dough balls down to flatten them with the palms of your hands.
Bake for approximately 7 to 8 minutes. Allow the cookies to cool on the cookie sheets for a few minutes before removing them to cooling racks to cool completely. Store in an airtight container, once cooled.
