Cadbury Eggs Peanut Butter Cookies

Ingredients
  

  • 1 c. butter softened
  • 3/4 c. brown sugar packed
  • 3/4 c. granulated sugar
  • 1/2 c. creamy peanut butter
  • 2 large eggs
  • 1 1/2 tsp. pure vanilla extract
  • 3 cups all-purpose flour
  • 1 tsp. baking soda
  • 1/2 tsp. salt
  • 1 c. Cadbury Mini Eggs coarsely chopped or broken up

Instructions
 

  • Preheat oven to 350 degrees Fahrenheit and line cookie sheets with nonstick baking mats or lightly spray with nonstick cooking spray.
  • In the bowl of an electric mixer, cream together softened butter, brown sugar, granulated sugar, creamy peanut butter, eggs, and vanilla.
  • In a separate bowl, whisk together flour, baking soda, and salt. Add flour mixture to wet mixture and mix just until incorporated.
  • Stir in chopped Mini Cadbury Eggs.
  • Form or scoop dough into 1 1/2" balls and place at least 2" apart on prepared cookie sheets. Press the dough balls down to flatten them with the palms of your hands.
  • Bake for approximately 7 to 8 minutes. Allow the cookies to cool on the cookie sheets for a few minutes before removing them to cooling racks to cool completely. Store in an airtight container, once cooled.
