Candy Corn Halloween Cookie Bars

Ingredients
  

  • 1 1/2 cups all-purpose flour
  • 3/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup old fashioned oats not quick oats
  • 1/2 cup (8 tablespoons) butter, softened
  • 1/3 cup creamy peanut butter
  • 1/2 cup granulated sugar
  • 1/2 cup packed light brown sugar
  • 1 teaspoon vanilla extract
  • 1 large egg
  • 1 large egg yolk
  • 1/2 cup candy corn m&m's crushed slightly
  • 1/2 cup miniature semi-sweet chocolate chips
  • 1/4 cup Halloween sprinkles
  • additional candy corn m&m's and sprinkles for top

Method
 

  1. Preheat the oven to 350 degrees. Lightly grease a 9X13-inch baking pan and set aside.
  2. In a medium bowl, whisk together the flour, baking soda, salt and oats.
  3. In a large bowl (or in the bowl of an electric stand mixer fitted with the paddle attachment) cream together the butter, peanut butter, granulated and brown sugars until fluffy and light in color, 2-3 minutes.
  4. Add in the vanilla, egg and egg yolk. Mix together well.
  5. Add in the dry ingredients, candy corn m&m's, chocolate chips, sprinkles, and mix just until combined.
  6. Press the batter into the prepared pan. Sprinkle some Halloween sprinkles on top and gently press some additional candy corn m&m's over top of the dough.
  7. Bake for 16-18 minutes until lightly browned on the edges. The bars will still look pale. Don't over bake or the bars will be dry! Remove the pan to a cooling rack and let the bars cool in the pan before cutting into squares.

Notes

* recipe note: Do not use the sprinkles that are tiny balls. The color will bleed. You want the non-pareil sprinkles that are actually shaped.
