Cheesy Ham and Potato Casserole

Ingredients
  

  • 8-10 medium potatoes *see note below, cooked, peeled and cubed into 1/2" pieces (you'll need about 8 cups total of potatoes)
  • 4 oz. cream cheese very softened
  • 1 c. sour cream
  • 1 can cream of chicken soup 10.5 oz
  • 2 tsp. dried sage
  • 1 tsp. dried rosemary
  • 1 tsp. dried thyme
  • 1 tsp. salt or to taste
  • 1/2 tsp. black pepper
  • 2 c. cooked cubed ham
  • 3 c. shredded cheddar cheese divided

Instructions
 

  • Preheat the oven to 350 degrees Fahrenheit. Grease a 9"x13" pan.
  • In a large bowl, stir together the sauce ingredients (softened cream cheese, sour cream, cream of chicken soup, sage, rosemary, thyme, salt and pepper).
  • Add in the cubed potatoes, diced ham, and 2 c. shredded cheddar and stir until the sauce is incorporated throughout.
  • Pour and spread the mixture into the prepared pan.
  • Cover the pan with foil and bake for approximately 45-55 minutes, or until completely warmed through, hot and bubbly.
  • Remove from the oven, sprinkle with the remaining 1 c. shredded cheddar and return to the oven and bake for about 5 more minutes, until the cheese is melted.

Notes

You could also add in baked bacon pieces for a fun and tasty spin.
*For the potatoes, you can bake, microwave, or boil the potatoes until tender, then remove the peels and dice into cubes. Alternatively, use slightly more than 8 cups of the pre-shredded frozen hash browns (because they reduce down when cooking if they're frozen). You will need to extend the cooking time by a little if using frozen potatoes.
