Preheat oven to 350 degrees Fahrenheit. In a large bowl, combine shredded chicken, softened cream cheese and Ranch dressing mix. Unroll the crescent roll dough on a silicone baking mat-lined baking sheet. Add 1 heaping Tbsp. of the filling mixture on the largest part of each roll (basically you'll want to just unroll all the crescent rolls and then split the filling mixture evenly between them before rolling them up), then tuck the sides in and roll up. Roll the filled bundles in crushed Ritz crackers and place on prepared baking sheet. The crescent dough should be slightly sticky, so the crumbs should adhere easily.
