Chicken Fajita Pinwheels

Ingredients
  

  • 2 cups shredded cooked chicken (I used rotisserie chicken)
  • 1/3 cup diced purple onion
  • 1/2 of a red orange and yellow bell pepper, diced
  • 1 Tbsp. olive oil
  • 1/4 cup sour cream
  • 6 oz. cream cheese softened
  • 2 Tbsp. fajita seasoning
  • 3/4 cup grated cheddar cheese
  • Flour tortillas

Method
 

  1. In a skillet over the stove top on medium heat, sauté diced purple onion with diced red, orange and yellow bell peppers in olive oil until everything is tender.
  2. In a large bowl, stir together cooked, shredded chicken, sautéed onion and bell peppers, sour cream, softened cream cheese, fajita seasoning and grated cheddar cheese.
  3. Spread about 1/2 cup of filling mixture on a flour tortilla within 1" of the edges. Roll up and slice into 1 1/2" to 2" rounds. Store in the refrigerator until ready to enjoy.
