Cilantro Lime Corn Salad

Ingredients
  

  • 2 cups 7 oz. each Minute® Ready to Serve Cilantro Lime Jasmine Rice
  • 2 tsp. olive oil
  • 1 ear sweet yellow corn on the cob
  • 1/4 of a red bell pepper diced
  • 1/2 of a jalapeno seeds and membranes removed, diced finely
  • 1 1/2 Tbsp. finely-diced onion
  • pinch of salt
  • pinch of pepper
  • 2 Tbsp. chopped cilantro
  • 2 tsp. fresh squeezed lime juice

Method
 

  1. Slice your corn off the cob, then dice your red bell pepper, jalapeños (finely), purple onion (finely) and cilantro.
  2. Add a few teaspoons of olive oil to a skillet over medium-high heat on the stovetop, stir in your corn, red bell pepper, jalapeños, purple onions, a pinch of salt and a pinch of pepper. Saute that for around 5 minutes.
  3. Remove from heat, stir in fresh-squeezed lime juice and chopped cilantro. Heat your Minute® Ready to Serve Cilantro & Lime Jasmine Rice according to package directions, then stir in the corn mixture and enjoy! Feel free to squeeze some extra lime juice over the top just and mix in before eating.
