I’m always racking my brain, trying to come up with easy side dish ideas. Are you the same way? I feel like by the time I’ve made the main portion of the meal, I’m all out of energy and creativity. 🙂 So that’s why I love when I happen upon simple side options that come together in a flash and are so delicious! This Cilantro Lime Corn Salad totally fits the bill! It’s the perfect companion to most any meal! It’s also a better-for-you-snack and a convenient lunch when you’re eating on the go or need wholesome nourishment in a snap! 

The cilantro corn salad can be made ahead of time. Then, just prepare some Minute® Ready to Serve Cilantro & Lime Jasmine Rice (it’s out of the microwave and ready to eat in just 90 seconds!), stir in the corn salad, and you’ve got magic in a cup!

My favorite part might just be the fact that it can be enjoyed right out of the cup, so there’s no cleanup! Plus, maybe the best news ever is that Minute® Ready to Serve rice is vegan and gluten free with no preservatives.

Here’s how to quickly put it together:

Slice your corn off the cob, then dice your red bell pepper, jalapeños (finely), purple onion (finely) and cilantro. Add a few teaspoons of olive oil to a skillet, stir in your corn, red bell pepper, jalapeños, purple onions, a pinch of salt and pepper. Saute that for around 5 minutes. Stir in fresh-squeezed lime juice and chopped cilantro. Heat your Minute® Ready to Serve Cilantro & Lime Jasmine Rice according to package directions, then stir in the corn mixture and enjoy! Feel free to squeeze some extra lime juice over the top just before eating. See, I told you it was easy!

Ingredients
  

  • 2 cups 7 oz. each Minute® Ready to Serve Cilantro Lime Jasmine Rice
  • 2 tsp. olive oil
  • 1 ear sweet yellow corn on the cob
  • 1/4 of a red bell pepper diced
  • 1/2 of a jalapeno seeds and membranes removed, diced finely
  • 1 1/2 Tbsp. finely-diced onion
  • pinch of salt
  • pinch of pepper
  • 2 Tbsp. chopped cilantro
  • 2 tsp. fresh squeezed lime juice

Method
 

  1. Slice your corn off the cob, then dice your red bell pepper, jalapeños (finely), purple onion (finely) and cilantro.
  2. Add a few teaspoons of olive oil to a skillet over medium-high heat on the stovetop, stir in your corn, red bell pepper, jalapeños, purple onions, a pinch of salt and a pinch of pepper. Saute that for around 5 minutes.
  3. Remove from heat, stir in fresh-squeezed lime juice and chopped cilantro. Heat your Minute® Ready to Serve Cilantro & Lime Jasmine Rice according to package directions, then stir in the corn mixture and enjoy! Feel free to squeeze some extra lime juice over the top just and mix in before eating.
