Cinnamon Butter Pecan Cookies

Ingredients
  

  • 1 c. butter softened (2 sticks)
  • 1 c. brown sugar packed
  • 1/2 c. granulated sugar
  • 2 tsp. vanilla
  • 2 large eggs
  • 2 3/4 c. all-purpose flour
  • 1 tsp. baking soda
  • 1 tsp. cinnamon
  • 1/2 tsp. salt
  • 1/2 c. finely-chopped pecans plus more for topping
  • Frosting:
  • 1/2 c. butter softened
  • 8 oz. cream cheese softened
  • 4 1/2 c. powdered sugar
  • 1 tsp. vanilla

Method
 

  1. Preheat oven to 350 degrees Fahrenheit and either lightly grease some cookie sheets or line them with nonstick baking mats. In the bowl of an electric mixer, cream together butter, brown sugar, granulated sugar, vanilla and eggs.
  2. Add in flour, baking soda, cinnamon, salt and pecans and mix until combined. Form or scoop dough into 1 1/2" balls and place at least 2" apart on cookie sheets. Bake for approximately 9 to 10 minutes. Allow them to cool slightly on the baking sheet before removing them to a cooling rack to cool completely.
  3. Make frosting by creaming together butter, cream cheese, powdered sugar and vanilla in the bowl of an electric mixer. Frost cookies and sprinkle with additional chopped pecans.
