Fajita Fry Platter

Ingredients

  • 1 large chicken breast sliced into thin strips
  • 1/2 of a red yellow and orange bell pepper, sliced thinly
  • 1 medium onion sliced thinly, then sliced in half
  • 3 Tbsp. olive oil
  • 1/2 of a 1.4 oz Fajita Seasoning Packet
  • 1 pkg. McCain® Seasoned Curly Fries Seasoned Potato Fries
  • 8 oz. salsa con queso nacho cheese sauce

Method

  1. Begin by preheating oven to 350 degrees Fahrenheit and arranging the bell pepper slices, onion slices and uncooked chicken strips on a sheet pan. Drizzle with 3 Tbsp. olive oil and sprinkle with half a packet of Fajita Seasoning. Toss to coat evenly.
  2. Bake for approximately 20-25 minutes, or just until the veggies are tender and chicken is cooked through completely. Wrap it in foil to keep it warm while the fries are baking, or place it in the warming drawer if you have one.
  3. Bake a package of McCain® Seasoned Curly Fries Seasoned Potato Fries according to package directions.
  4. On a large serving platter, layer the fries, then the chicken fajita mixture. Drizzle with desired amount of warm nacho cheese sauce. Serve immediately.
