Halloween Cream Cheese Brownies

Ingredients
  

  • 1 box 18.3 oz. fudge brownie mix (use Betty Crocker so the ounces match)
  • 5 Tbsp. butter melted
  • 1 large egg
  • Cream cheese layer:
  • 8 oz cream cheese softened
  • 1 tsp. vanilla extract
  • 1/3 c. sugar
  • 1 large egg
  • Orange food coloring 4-6 drops
  • Halloween sprinkles

Method
 

  1. Preheat oven to 325 degrees Fahrenheit and line an 8x8" baking dish with foil or parchment paper so it overlaps over the sides. If using foil, lightly spray it with nonstick cooking spray.
  2. In the bowl of an electric mixer, mix together dry brownie mix, melted butter and egg until incorporated. Mixture will be slightly crumbly. Reserve 1/2 cup of the brownie mixture and set aside for the topping. Press the remaining mixture into the prepared pan.
  3. In the bowl of an electric mixer, cream together cream cheese, vanilla extract, sugar, egg and orange food coloring until smooth and no lumps remain. Spread over brownie layer, sprinkle with reserved 1/2 c. brownie mixture and Halloween sprinkles, then bake for approximately 30 minutes, or just until cream cheese layer is set (it's not jiggly or runny, it will get puffy). Let it cool for 1 hour at room temperature, then refrigerate it for about one hour, carefully lift it from the pan, slice and serve.
