In the bowl of an electric mixer, cream together cream cheese, vanilla extract, sugar, egg and orange food coloring until smooth and no lumps remain. Spread over brownie layer, sprinkle with reserved 1/2 c. brownie mixture and Halloween sprinkles, then bake for approximately 30 minutes, or just until cream cheese layer is set (it's not jiggly or runny, it will get puffy). Let it cool for 1 hour at room temperature, then refrigerate it for about one hour, carefully lift it from the pan, slice and serve.
