Method
- Preheat the oven to 350 degrees Fahrenheit. Line a 9"x13" pan with parchment paper so it hangs over the edges.
- In a large microwave-safe bowl, melt the butter in 30 second increments in the microwave. Stir in the sugar by hand.
- Add fresh lemon juice, lemon zest and eggs and stir by hand just until incorporated.
- Add flour, salt and baking powder and stir by hand just until incorporated. Don't over-stir.
- Spread batter into prepared pan and bake for approximately 18 to 20 minutes, or just until baked through and set up.
- Allow them to cool completely, then prepare the glaze by whisking together powdered sugar, fresh lemon juice and lemon zest (and milk, if necessary, for thinning). Pour and spread over cooled bars. Let the glaze set up completely, then slice into bars and serve.
Notes
This is a thinner bar. I prefer it so the lemon flavor is not overwhelming. If you'd like a thicker blondie, simply bake it in an 8"x8" pan instead of the 9"x13" pan. You'll need to add about 5 minutes, give or take a few, to the baking time.
