Orange Pineapple Streusel Muffins

Ingredients
  

  • 1/2 c. butter softened
  • 1 tsp. vanilla extract
  • 1/4 c. Simply Orange Pulp Free Juice
  • 1 Tbsp. orange zest
  • 1/2 c. crushed pineapple from the can
  • 3/4 c. sugar
  • 1 large egg
  • 1/2 c. sour cream
  • 2 c. all-purpose flour
  • 1/2 tsp. baking soda
  • 1 tsp. baking powder
  • 1/2 tsp. salt
  • Streusel Topping:
  • 1 tsp. orange zest
  • 1/4 c. butter softened
  • 1/4 c. all-purpose flour
  • 1/4 c. brown sugar

Instructions
 

  • Preheat oven to 350 degrees Fahrenheit. Line muffin pans with papers.
  • In the bowl of an electric mixer, cream together butter, vanilla, Simply Orange Pulp Free Juice, orange zest, crushed pineapple sugar, egg, and sour cream. It's ok if it's lumpy as it will all come together once the flour mixture is added.
  • In a separate bowl, stir together flour, baking soda, baking powder and salt. Add flour mixture to wet mixture and mix just until combined. Don't over mix after adding the flour.
  • Fill muffin papers 2/3 of the way with batter. Prepare streusel topping by adding orange zest, softened butter, flour and brown sugar to a bowl and mixing with a fork or cutting in until course crumbs form. Sprinkle over tops of batter. Bake for approximately 15 minutes, or just until they're set and a toothpick inserted into the center comes out clean. Serve warm.
