Patriotic Flag Cake

Ingredients
  

  • 1 3/4 c. plus 2 Tbsp. all-purpose flour
  • 1 1/2 c. sugar
  • 2 1/4 tsp. baking powder
  • 3/4 tsp. salt
  • 1 c. plus 2 Tbsp. milk
  • 1/3 c. plus 3 Tbsp. shortening
  • 2 large eggs
  • 2 tsp. vanilla extract
  • Frosting:
  • 1 tub 8 oz. whipped topping
  • 1 block 8 oz. cream cheese, softened
  • 1 c. powdered sugar
  • 1 tsp. vanilla extract

Method
 

  1. For the cake, preheat oven to 350 degrees Fahrenheit. Grease a 9x13" cake pan. Add all ingredients from the flour down to the vanilla in the bowl of an electric mixer and mix, scraping down the sides and bottom of the bowl in between, until all ingredients are incorporated.
  2. Pour into prepared cake pan and bake for approximately 20-23 minutes, or just until a toothpick inserted into the center comes out clean. Let cool.
  3. For the frosting, in the bowl of an electric mixer, cream together cream cheese, powdered sugar and vanilla until nice and creamy and no lumps remain. Fold in whipped topping with a spatula and spread over cooled cake. Decorate with halved strawberries, stems removed, for stripes and blueberries in a square in the upper left corner. Refrigerate until ready to eat.
