Pumpkin Magic Bars

Ingredients

  • Crust:
  • 3 c. graham cracker crumbs
  • 3/4 c. butter melted
  • 3 Tbsp. sugar
  • Pumpkin layer:
  • 1/2 c. butter softened
  • 1 1/4 c. sugar
  • 1 c. canned pumpkin puree NOT pumpkin pie filling
  • 1 large egg
  • 1 tsp. vanilla extract
  • 1 1/2 c. all-purpose flour
  • 1 tsp. baking soda
  • 1/2 tsp. salt
  • 3/4 tsp. Spice Islands cinnamon
  • 1/4 tsp. Spice Islands cardamom
  • 1/4 tsp. Spice Islands cloves
  • 1 c. semi-sweet chocolate chips
  • 1 c. chopped pecans

Method

  1. Preheat oven to 350 degrees Fahrenheit and line a 9"x13" pan with parchment paper so it hangs over the sides slightly. Press it into the pan so it takes form and stays as much as possible.
  2. For the crust, stir together graham cracker crumbs, sugar and melted butter until all the crumbs are moist and coated. Press and pack the crust mixture into prepared pan with the back of a flat measuring cup and bake for 8 minutes.
  3. While the crust is baking, prepare the pumpkin layer by creaming together softened butter, sugar, canned pumpkin, egg and vanilla.
  4. In a separate bowl, stir together flour, baking soda, salt, cinnamon, cardamom, and cloves. Add to wet ingredients and mix until combined.
  5. Spread quickly and carefully over baked crust. Press chocolate chips and chopped pecans into the batter, then bake for about 30-35 minutes more, or just until it's no longer jiggly and it's set completely. Allow them to cool completely, then slice into bars and serve.
