Roasted Red Pepper Chicken Salad WHEAT THINS Snacks Sandwiches

Ingredients
  

  • 1 large chicken breast cooked and shredded (the equivalent of about 1 1/2 c. shredded)
  • 1 Tbsp. butter
  • 1/2 red bell pepper diced
  • 2 stalks celery sliced thin
  • 1 garlic clove minced
  • 4 oz. cream cheese softened
  • Salt and pepper to taste
  • 1/4 tsp. chives
  • 2 Tbsp. sour cream
  • 1/2 tsp. Dijon mustard
  • WHEAT THINS Snacks serving size (16)

Method
 

  1. In a skillet over medium-high heat, melt butter. Add minced garlic and cook until fragrant. Add diced bell pepper and celery and saute until soft. Remove from heat.
  2. In a bowl, stir together softened cream cheese, salt, and pepper, chives, sour cream and Dijon mustard. Add celery and bell peppers and cooked, shredded chicken and stir to combine.
  3. Place 1-2 tsp. of the mixture on a WHEAT THINS Snacks cracker and sandwich another cracker on top. Repeat for additional mini sandwiches and place on a serving platter. Serve immediately.
