Here’s how to put together these absolutely delectable Roasted Red Pepper Chicken Salad WHEAT THINS Snacks Sandwiches:
Dice the red bell pepper and celery, then saute them in butter with garlic until soft.
Stir together cream cheese, sour cream, dijon mustard, chives, salt and pepper in a bowl. Add cooked, shredded chicken and red pepper/celery mixture and stir to combine. Add a teaspoon or two of the mixture onto a WHEAT THINS Snacks cracker, sandwich with another, then place on a serving platter.

Roasted Red Pepper Chicken Salad WHEAT THINS Snacks Sandwiches
Ingredients
- 1 large chicken breast cooked and shredded (the equivalent of about 1 1/2 c. shredded)
- 1 Tbsp. butter
- 1/2 red bell pepper diced
- 2 stalks celery sliced thin
- 1 garlic clove minced
- 4 oz. cream cheese softened
- Salt and pepper to taste
- 1/4 tsp. chives
- 2 Tbsp. sour cream
- 1/2 tsp. Dijon mustard
- WHEAT THINS Snacks serving size (16)
Instructions
- In a skillet over medium-high heat, melt butter. Add minced garlic and cook until fragrant. Add diced bell pepper and celery and saute until soft. Remove from heat.
- In a bowl, stir together softened cream cheese, salt, and pepper, chives, sour cream and Dijon mustard. Add celery and bell peppers and cooked, shredded chicken and stir to combine.
- Place 1-2 tsp. of the mixture on a WHEAT THINS Snacks cracker and sandwich another cracker on top. Repeat for additional mini sandwiches and place on a serving platter. Serve immediately.
