Skillet Chipotle Lime Pork Chops

Ingredients
  

  • Smithfield All Natural Boneless Pork Chops about 1 lb.
  • Marinade:
  • 1/8 c. olive oil
  • 3 Tbsp. fresh-squeezed lime juice
  • 1 tsp. finely-diced chipotles in adobo sauce from the can
  • 2 tsp. minced garlic
  • 1 tsp. finely-chopped cilantro
  • 1/4 tsp. salt
  • 1/8 tsp. pepper
  • 1 Tbsp. honey

Method
 

  1. Combine all marinade ingredients in a gallon-size resealable bag and use your hands to combine by squishing it around in the bag.
  2. Place Smithfield All Natural Boneless Pork Chops in the bag and slosh around to coat with the marinade. Let it sit in the refrigerator for at least 3 hours (6-8 hrs is recommended for optimal flavor).
  3. Heat a large skillet over the stove top on medium heat for a few minutes until the skillet is hot. Add about a teaspoon of olive oil to the skillet and swish it around to lightly coat it. Remove Smithfield All Natural Boneless Pork Chops from the bag and place on hot skillet.
  4. Cook them about 2-3 minutes per side, or just until completely cooked through (cook time will vary depending on the thickness of your meat and your stovetop burner). The outside should look glazed and a nice golden brown color. Keep a close eye on them and be sure not to overcook them. They cook fast!
  5. Serve immediately with Chipotle Lime Corn on the Cob and fresh fruit.
