Summer Citrus Salad

Ingredients
  

  • Lemon Dressing:
  • 1 tsp. lemon zest finely grated
  • 3 Tbsp. fresh squeezed lemon juice
  • 1 1/2 tsp. sugar
  • 1 tsp. Dijon mustard
  • 1/8 tsp. salt
  • 1/8 tsp. pepper
  • 1 Tbsp. olive oil
  • 1/2 tsp. water
  • 1/8 tsp. garlic powder
  • Salad:
  • 2 handfuls mixed greens
  • 4 Mariani Probiotic Prunes
  • 1 Tbsp. sliced almonds
  • 1/8 c. quinoa cooked according to package directions
  • 1 Tbsp. green onions diced
  • 1/8 c. mandarine oranges
  • 1/8 c. grapefruit chunks

Method
 

  1. To make the dressing, whisk together lemon zest, lemon juice, sugar, Dijon mustard, salt, pepper, olive oil, water, and garlic powder in a small bowl. Place in an airtight container and refrigerate until ready to use. Be sure to give it a good stir before drizzling over the salad.
  2. Place the mixed greens on a plate, then layer and pile on the Mariani Probiotic Prunes, almonds, quinoa, green onions, mandarine oranges and grapefruit chunks in whatever order you prefer. Drizzle the dressing over and enjoy!
