Circus Animal Cake Bars

If you’re in need of the perfect treat for adults and kids, these Circus Animal Cake Bars are just the thing!  They involve my favorite pink and white store-bought cookies for a fun crunch, cute color and pop of sweet flavor!
Do you love frosted animal cookies? I can’t get enough of them.  It’s one of those things that tastes every bit as good as I remember when I enjoyed them growing up.  So either my taste buds haven’t matured, or they are just an awesome snack!  I’m pretty sure it’s the latter.  🙂
They are such an adorable cookie and provide a party in every bite.  The sprinkles make them that much more irresistible.  🙂  In fact, I remember begging my mom for them on countless trips to the grocery store.  When she relented, I’d hide the bag and hoard my surprise so I didn’t have to share with my siblings when I got home.
So I just couldn’t help but incorporate them into a fun dessert for everyone to eat right up!  This refreshment is super easy to make, i.e. you can be relishing in its goodness in not too long!  Perfect!
{CIRCUS ANIMAL CAKE BARS}
1/4 c. salted butter, melted
1 yellow cake mix (15.25 oz), dry
1 egg
1/4 c. milk
Circus Animal Cookies
Topping:
1/2 c. white chocolate chips, melted
Preheat oven to 350 degrees Fahreneit.  Spray an 8×8 cake dish with nonstick cooking spray.  Pour cake mix into a large bowl.  Add melted butter (slightly cooled), egg, and milk.  Stir until incorporated.  Mixture will be thick.
Cover the entire bottom of the pan with whole circus animal cookies.  Press and spread cake batter evenly on top of the cookies with your hands, while holding the cookies in place.  They will want to come up, but persevere.  It can be done!   Sprinkle with crushed animal cookies and press them lightly into the top of the batter.  Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.  Let cool, then drizzle with melted white chocolate.  Cut into squares and enjoy!
These are definitely a new favorite goodie at our house.  They are certainly not just for kids.  I hope you love them too!

    I am very intrigued by both of these recipes! I loved those circus animal cookies as a child, so I may have to make those cake bars so I can take a trip down memory lane!
