My family has always loved grilled pizzas! There’s just something so amazing and unique about those char marks and the smokey BBQ flavor they lend to the crust!
More often than not, on summer evenings, you can find us outside grilling up some goodness. Since my kids are total pizza fanatics through and through, pizza is on the regular meal rotation. 🙂 Even though I don’t think we could ever tire of the classic crust, marinara and cheese variety, we like to switch it up every now and then to keep dinner interesting!
We are crazy for chicken fajitas, so I thought, why not combine the two meal-time favorites and make a one-of-a-kind pizza that no one will forget! I have a feeling these Grilled Chicken Fajita Pizzas will become a favorite at your house too!

Now I’m sure you know how fast things can get messy when we’re talking about pizza on the grill! And Chicken Fajita Pizza may be even more messy, if that’s possible! The drippy salsa, melty cheese and chicken and veggie juices end up all over hands and the grilling area!

So my husband and I like to keep Kleenex® Wet Wipes Gentle Clean and VIVA® Big Roll Paper Towels at-the-ready for easy cleanup during and after the grilling process!

Grilled pizzas are so much easier when done as a team, because they cook really quickly, so the grillers really have to be on their toes throughout all the steps. We both agreed that we couldn’t have done it as gracefully without the help of these products!
While the pizzas were under the grill hood, we took a quick second to clean up before serving them.

Here’s a quick rundown on how to grill these pizzas. Just a tip, you’ll want to be sure to have all your ingredients ready and within reach before starting, because the grilling process happens in a blink and you wouldn’t want to burn these yummy pizzas!

Start by grilling your chicken, bell pepper and onion strips. You’ll need a grill mat to make this part easier, but if you don’t have one, don’t fret, because you can use a cast iron skillet over the grill too.
Next, brush olive oil on one side of your dough rounds and place them oil side down on the grill (set to high heat). Brush oil on the top of the dough rounds, let that grill for about 1-2 minutes, then flip. Now put on your toppings. Spread on some chunky salsa, sprinkle with cheese and the chicken fajita mixture, then more cheese and let that grill until the under side is done, about another 1-2 minutes. Close the grill hood for this part so the cheese can melt and everything can warm through.

Ingredients
Method
- For the crust, stir all ingredients together, except flour. Add flour, stir until you can’t anymore, then knead for a bit by hand. Add a little more flour, as necessary, until dough is still slightly tacky to the touch, but not too sticky to manage. No raising necessary.
- *Make sure to have all your ingredients ready and within reach before starting to grill.
- Heat grill to high heat. Season chicken, pepper and onion pieces well with an all-purpose seasoning (I used Greek seasoning). Melt about 1 Tbsp. butter butter on a grill mat and spread around. Grill your chicken, bell pepper and onion pieces together on the grill mat, flipping and moving them around often, until chicken is cooked all the way through and peppers and onions are tender. If you don't have a grill mat, you can use a cast iron skillet over the grill too. Remove chicken fajita mixture to a bowl, once done, and set aside.
- Next, form dough rounds by breaking off a fistful of dough and rolling it out flat on a floured surface. Brush olive oil on one side of your dough rounds and place them oil side down on the grill. Brush oil on the dough that's facing up, while letting that grill for about 1-2 minutes, then flip. Now put your toppings on the grilled side. Spread on some chunky salsa, sprinkle with cheese and the chicken fajita mixture, then more cheese and let that grill until the under side of the crust is done, about another 1-2 minutes. Check it by slightly lifting a side with a metal spatula and making sure there are nice, pronounced grilled marks. Close the grill hood for this part so the cheese can melt and everything can warm through. Serve immediately.
