Are you getting tired of cooking yet? I have to admit that last week I felt a little burnt out. After preparing a huge Easter feast and then immediately heading into a full week of cooking, I was tired. I don’t want to live on frozen meals right now, so I’m trying to serve homemade whenever possible.
Probably my top tip for not burning out on cooking is to make enough for leftovers when you do cook. So then you’ll basically just be cooking about 3 nights a week. Last week, that didn’t work out for me, which is probably why I’m feeling like I don’t want to cook for the next month, haha! But I’m going to try to be smarter about my meal planning this week.
Here’s what we ate for dinner last week:
Pasta with Meatballs. I just used our favorite jarred Alfredo sauce with Penne and then Costco meatballs. Always a hit!
Pizza Rolls. This is probably the one dinner that we eat the most often. Because I know the kids won’t complain about it!
White Chicken Chili. I hadn’t made this recipe in a long while! It’s so flavorful, hearty, and yummy! I omitted one of the cans of white beans this time, because I felt like it had enough substance without it (and I’m trying to conserve our food storage). But it sure doesn’t hurt to add it!
Breakfast Burritos. I cook up some hash browns, breakfast sausage, and scramble some eggs, then combine it in flour tortillas with sour cream and salsa. So easy and yummy!
Homemade Pretzels with cheese sauce. Yes, we ate bread as a main dish and it was amazing! I needed a break and some serious carbs after a long week! I’d been wanting to enjoy these for a while and I knew I wouldn’t have the motivation to make a regular main dish plus these, so I chose just the pretzels, ha!
