S’mores Brownie Pie

Now that Halloween is over, Thanksgiving is on the brain! If you’re planning your Thanksgiving dinner menu, you’re going to want to add this S’mores Brownie Pie to it!

I’m not going to beat around the bush-pie is my favorite part about the Thanksgiving feast. That probably doesn’t surprise you. You know how I love my desserts! I love a good homemade roll too, but I really just save my appetite for the pie! 🙂

I’ve shared so many delicious pie recipes here on the blog that I would totally recommend for any occasion, but especially for the holiday season, which is already basically upon us! So crazy! This Pumpkin Pie Cake, this Best Apple Pie, this Chocolate Pie, and this Butterfinger Pie are some of my top favorites for Thanksgiving dessert.

You just can’t go wrong when you put graham crackers, chocolate and marshmallows together! They are a winning trio that cause the taste buds to celebrate!

I created a homemade graham cracker crust, which is so easy to do, but if you’d rather, you can just buy a pre-made crust. The homemade brownie layer is so rich and decadent and fudgy! The broiled marshmallows and candy bar pieces on top make it even more incredible! Feel free to add the candy bar of your choosing, so long as the flavors meld. 🙂 I just used leftover mini candy bars from the Halloween candy stash.

Be careful, because once you make this and serve it at the Thanksgiving meal, everyone will expect you to bring it year after year! 🙂 But I don’t see anything wrong with that.

You may need to make more than one, because I have a feeling this will be the pie that will go first! Who wouldn’t love s’mores in pie form?

Ingredients Method

Ingredients
  

  • Crust:
  • 1 1/2 c. graham cracker crumbs about 9 graham crackers, crushed
  • 2 Tbsp. granulated sugar
  • 6 Tbsp. butter melted
  • Brownie layer:
  • 1/2 c. butter
  • 1/4 c. semi-sweet chocolate chips
  • 1/2 c. brown sugar
  • 2 Tbsp. granulated sugar
  • 1 tsp. vanilla extract
  • 1 large egg
  • 1 Tbsp. milk
  • 1/2 c. all-purpose flour
  • 3 Tbsp. baking cocoa
  • 1/4 tsp. baking powder
  • 1/4 tsp. salt
  • 1/2 tsp. corn starch
  • 15 big marshmallows cut in half
  • about 1/2 c. chopped candy bars I've used Reese's, Snicker's, Milky Way, and Hershey's milk chocolate, and all are great

Method
 

  1. Preheat the oven to 350 degrees Fahrenheit.
  2. For the crust, stir together the graham cracker crumbs and 2 Tbsp. sugar. Then stir in 6 Tbsp. melted butter until all the crumbs are moist. Press evenly into the bottom and sides of a 9" pie dish.
  3. Bake the crust for 6-7 minutes.
  4. While the crust is baking, prepare the brownie layer. In a microwave-safe bowl, melt 1/2 c. butter and 1/4 c. semi-sweet chocolate chips together in 30 second increments, stirring in between, just until melted. Be careful not to over heat it. Whisk until smooth.
  5. Add brown sugar, granulated sugar, vanilla extract, the egg, and milk and whisk just until incorporated.
  6. Stir in flour, baking cocoa, baking powder, salt and corn starch with a large spoon just until incorporated. Don't over-stir.
  7. Pour the brownie batter over the hot crust and quickly spread evenly over (it will start to bake once it hits the hot graham cracker crust). Place it back in the oven and bake for approximately 17-18 minutes, or just until set. Cut your marshmallows in half while it's baking.
  8. When it's done baking, set the oven to broil and immediately arrange the marshmallows closely together over the top of the hot brownies. Put it under the broiler and watch very carefully the entire time, just until the marshmallows turn golden brown. This will only take a minute or so, so don't let it leave your sight! Remove it from under the broiler and insert candy bar pieces into the marshmallows. Let the pie completely cool, then serve.
