Strawberry Shortcake Sundae Cups

These no-bake creamy strawberry-loaded cups with a shortbread cookie crust are the perfect scrumptious collision of two dessert favorites…Strawberry Shortcake and ice cream sundaes!  Plus, they’re a perfect way to let kids get involved in the kitchen!
We’ve had a very busy school year and my kiddos are eager to be done so they can start enjoying their summer break.  One thing we’ll be enjoying more of, in addition to lots of outdoor play time, is baking and cooking together.  My kids just love getting involved in the process when I’m making yummy treats during the day or cooking dinner in the evening.
One thing they’re not huge fans of, though, is getting messy, which so often is a result.  These three children may be the only ones out there who didn’t face plant into their first birthday cake, even when their mother was encouraging, even begging, them to do so.  🙂
They’ve never been afraid to wreak havoc on their bedrooms or the toy area, but when it comes to their hands, they like them to be nice and tidy.  And I try to encourage cleanliness in whatever form I can get it from them.
So whenever they sit on the counter and ask to help make something tasty to eat, we always make sure the Huggies Simply Clean Wipes are within their cute little arm’s reach.

My kids have been eager to make a strawberry dessert and since our kitchen is under renovation, it had to be no-bake.  So I thought, why not put together some simple and delicious shortcake ice cream sundaes in a muffin tin?  You won’t believe how fast they come together, and you certainly won’t mind the mess that ensues, either, if those Huggies Wipes are conveniently on hand.
{STRAWBERRY SHORTCAKE SUNDAE CUPS}
12 shortbread cookies, crushed
1/4 c. butter, melted
About 3 cups Strawberry Ice Cream, softened enough to be spreadable
About 3/4 c. sliced fresh strawberries
Whipped Topping
Strawberry Syrup Ice Cream Topping
Start by crushing 12 shortbread cookies in a resealable plastic bag.  Next, combine them with 1/4 c. melted butter until the crumbs are all coated.  Divide the mixture evenly among 12 cups in a muffin tin and press into the bottom.

Messy hands? Don’t care!

Huggies Simply Clean Wipes to the rescue! They are perfect for quickly cleaning hands when prepping food and wiping faces after taste testing said food.  🙂
 Next, spread some softened strawberry ice cream over the crust and place in the freezer until firm (about 1 hour).  My kids found it easier to use their hands than a spoon. 🙂

Remove from the freezer and press diced fresh strawberries on top of the ice cream.

Next, add a dollop of whipped topping, drizzle generously with strawberry ice cream topping, and enjoy quickly! Make sure to keep a package of Huggies Simply Clean Wipes close for easy cleanup, because I guarantee these mouthwatering melty treasures will leave their mark on the hands and faces.  🙂
These things are seriously delectable!  They remind me of my Deluxe Strawberry Pie.  All the goodness of a strawberry shortcake and an ice cream sundae in a handheld, super easy, no-bake form! That’s what I call winning in the kitchen.  And when there’s not a residual mess too?  I’d say it gets two thumbs way up!
