Cheesy Mexican Breakfast Skillet

Start the day off right or serve breakfast for dinner with this hearty and yummy Cheesy Mexican Breakfast Skillet!

My family loves breakfast foods. We could eat them for every meal. The trouble is, school mornings are completely insane, so it’s hard to commit the extra time to prepare a special, warm morning meal.

So we compromise and have breakfast for dinner!

I picked up all the ingredients for today’s yummy meal at Walmart. Some MorningStar Farms® Chipotle Black Bean Crumbles™ to throw in the mix, MorningStar Farms® Meal Starters® Steak Strips for another day, and some Great Value™ frozen corn and shredded hashbrowns.

MorningStar Farms® products are convenient, quick, and great for busy moms like me! They’re a perfect way to tackle those “Vegolutions” (a.k.a New Year’s Resolutions to incorporate more veggies into your diet.) Although, they’re certainly not just for vegetarians!

Getting my kids to eat vegetables has always been a big challenge in our home, so I love that MorningStar Farms products make it easy and tasty to do just that.

We’re big fans of breakfast burritos around here.  They make a regular appearance at our table, so I decided to make a Mexican version. Funny story, though, I forgot to add in the green chiles! Ha! Do you ever do that while cooking?

I thought it was missing something! 🙂

So my photographed version is slightly less Mexican in flavor, but you of course can put them in yours for the full, delicious effect. 🙂

It was still incredibly delectable. We all enjoyed it immensely. Breakfast for dinner is always a good idea!

If there’s one sure-fire thing my picky kids will eat, it’s eggs and hashbrowns! And I love that I was able to slip in some veggies with it too! They didn’t even complain!

This was a slam dunk meal!

Here’s how to put it all together:

Cheesy Mexican Breakfast Skillet

Ingredients
  

  • 1 pkg. 16.2 oz MorningStar Farms® Chipotle Black Bean Crumbles™
  • 2 c. Great Value™ Shredded Hashbrowns
  • 1 c. Great Value™ frozen corn
  • 10 large eggs
  • 1/2 c. diced green chiles
  • salt and pepper to taste
  • 1 c. cheddar cheese shredded
  • Warm flour tortillas sour cream and salsa (optional)

Instructions
 

  • Cook MorningStar Farms® Chipotle Black Bean Crumbles™ according to package directions over stove top in a large skillet. Add hashbrowns, corn and black beans and cook for an additional 5 minutes, or just until hashbrowns are warm and no longer frozen. Add eggs and green chiles and scramble with the mixture, cooking until the mixture is no longer runny. Top with cheese and cover with a lid until cheese is melted. Serve with warm flour tortillas, sour cream and salsa, optional.

This is going into the regular meal rotation at our house, for sure! Our taste buds and tummies were very happy!

      Thanks! I usually leave the chiles out for my kids and add them in them in later for the hubby and me.
