Lemonade Krispie Treats

Have you tried frozen lemonade pie? Well this is a spin on that dessert that I came up with the other day.  I wasn’t sure if the flavors and textures were going to mesh well, but it worked out fantastically.  Instead of the traditional graham cracker crust, I swapped in a Rice Krispie bottom layer, made the traditional creamy lemonade filling, then topped it off with some more sweetened Krispies.  The result is complete deliciousness!  The hubby and our dinner guest gave it two thumbs way up.  I hope you love it too!

 

 
{LEMONADE KRISPIE TREATS}

 

Crust
2 c.  Rice Krispies
Scant 1/8 c. white sugar
4 T. butter
Lemonade Filling
1 (14 oz.) can sweetened condensed milk
1 (8 oz.) container whipped topping, thawed
1 (6 fluid oz.) can frozen lemonade concentrate, keep frozen
Topping
1 c. Rice Krispies
1 T. sugar
2 T. butter

For the crust, melt butter. Stir in Rice Krispies and sugar until well combined.  Press into the bottom of an 8×8 pan or a pie plate.  For the filling, pour sweetened condensed milk into a bowl.  Fold in whipped topping.  Add frozen lemonade and continue to gently fold.  Don’t let the mixture become soupy.  Pour over Rice Krispie crust.  For the topping, melt butter.  Stir together butter, sugar and Rice Krispies until well combined. Sprinkle over the top of the lemonade layer.  Freeze overnight (or at least 9-10 hours).
