M&M’s Chocolate Cookie Bars

These M&M’s Cookie Bars are a chocolate lover’s paradise! They’re soft and oh-so incredibly delicious!

I hope you are having a wonderful summer! We just returned from a three week vacation visiting family out of state. We had the best time and enjoyed it to the fullest! We don’t often get to spend time with our extended family, so we really soaked it all in! 

I’m in denial that school will be starting back up in just a few short weeks. My oldest daughter will be in high school! Where does the time go? She’s excited and hoping to make it onto the volleyball team. I don’t feel old enough to have a high schooler! I swear I just graduated from high school, haha. My second oldest will be starting his first year of middle school. I can’t believe it. Kids grow up too fast! I wish they wouldn’t.

These chocolate cookie bars are the perfect way to forget how quickly children are growing up for a moment and satisfy that chocolate craving. They’re brownie-like and topped with oodles of M&M’s candies. These are so perfect for those end-of-summer BBQ’s and picnics at the park.

Also, the summer olympics are happening right now and the M&M colors coordinate perfectly with the olympic rings! Host an olympics watching party and serve these as a fun and festive dessert!

I can’t wait to curl up on the couch and watch some gymnastics and track. The athletes are truly incredible and are such an inspiration. Especially as a runner, I have nothing but respect and appreciation for all the intense training and dedication that goes into it.

And speaking of running, while on vacation a few weeks ago, I participated in a 5k race in commemoration of Independence Day. If you follow me on Instagram, you may have noticed from my stories that I’ve been on a dedicated running routine since March to improve my pace and endurance for this race. I’m happy to report that I achieved a personal record for the 5k at a finish time of 21:09 and an average pace of 6:50 per mile. It felt amazing to cross that finish line and see that all my hard work had paid off. My husband ran it with me too!

I laughed with my family afterwards and talked about how I run because I genuinely love it, but also because I love chocolate so much. 🙂 I’m not joking when I say that many of the mornings as I’m panting and sweating out there, I’m thinking about that chocolate cookie that I’ll be eating later that evening. It’s a big motivator!

I’m a huge believer that it’s totally possible to achieve balance in life between satisfying that sweet tooth craving in moderation while also pursuing your fitness goals! Enjoy that cookie bar, then fuel your body with the optimal nutrition all the other times. I personally eat dessert every day. I avoid sugar in the morning and then I look forward to my sweet treat in the afternoon, usually between lunch and dinner.

M&M’s Chocolate Cookie Bars

Ingredients Method

Ingredients
  

  • 1 c. salted butter softened
  • 1 c. light brown sugar packed
  • 1/2 c. granulated sugar
  • 2 large eggs
  • 2 tsp. vanilla extract
  • 1/2 c. sour cream full fat
  • 1 c. semi-sweet chocolate chips melted and stirred until smooth
  • 2 1/4 c. all-purpose flour
  • 1/2 c. baking cocoa
  • 1/2 tsp. salt
  • 1 tsp. baking soda
  • 1 c. M&M's for topping

Method
 

  1. Preheat the oven to 350 degrees Fahrenheit and spray a 13"x9" cake pan with nonstick baking spray.
  2. In the bowl of an electric mixer, cream together softened butter, brown sugar, granulated sugar, eggs, vanilla extract and sour cream. Mix well and scrape down the sides of the bowl in between.
  3. Add in melted chocolate and mix until combined.
  4. In a separate bowl, whisk together flour, baking cocoa, salt and baking soda.
  5. Add flour mixture to wet mixture and mix just until combined, scraping down the sides in between.
  6. Spread evenly into prepared pan.
  7. Sprinkle with M&M's and lightly press them into the batter.
  8. Bake for approximately 19-20 minutes, or just until set. Be careful not to over bake.
  9. Allow the bars to cool completely, then slice into squares and either serve immediately or store in an air tight container until ready to serve.
