And now that we’ve made sure our guests will be feeling well, let’s talk about how to impress them with this yummy Peppermint Cheesecake confection! It includes a graham cracker crust, peppermint cream cheese filling, and is topped with crunchy peppermint pieces! It’s a festive color, too, so it’s perfect for sharing with holiday guests and at fun gatherings.
Here’s how to put it together:
No-Bake Peppermint Cheesecake
Ingredients
- Crust:
- 2 c. graham crackers crushed
- 1/3 c. sugar
- 1/2 c. butter melted
- Filling:
- 2 8 oz. packages cream cheese, softened
- 3 1/2 c. powdered sugar
- 1 tsp. peppermint extract
- 8 oz. tub whipped topping
- 1/4 c. crushed peppermints
- 2-3 drops red food coloring optional
- Topping:
- 1-2 Tbsp. crushed peppermints
Instructions
- For the crust, stir together all ingredients in a bowl until all crumbs are moistened and then press into the bottom of a 9x13" cake pan. Place it in the freezer while you prepare the cream cheese layer.
- For the cream cheese layer, in the bowl of an electric mixer, cream together cream cheese, powdered sugar, and peppermint extract. Fold in whipped topping, 1/4 c. crushed peppermints, and red food coloring. Spread over crust, sprinkle with additional crushed peppermints, if desired, and store in the refrigerator, covered, until ready to serve.
