These Southwest Style Fiesta Chicken Fajita Quesadillas are a simple yet flavor-packed summer meal that comes together in a hurry without even turning on the oven! Loaded with mixed veggies, Tyson chicken and nacho cheese sauce, this one’s a real winner that the whole family will love!
I never pass up a good quesadilla. I love the most basic form with just cheese and tortillas, but fill it with vegetables and protein, and I’m all in! Combine it with the flavors of a fajita and my taste buds do flips!
My favorite part about quesadillas is the fact that they are SO family friendly! I don’t have to worry about my kiddos turning up their noses when I put this plateful of yummies in front of them, and that’s a reason to celebrate in my book.
If there’s one word that sums up how I’ve been feeling this summer, it is HOT! Being nearly eight months pregnant, I just can’t seem to shake the ever constant feeling of nearly succumbing to the heat, even when I’m indoors. So whenever I find a meal solution that doesn’t require baking, I do jumping jacks, well, as close as it can get with a giant belly. 🙂
I love that the Tyson Grilled & Ready Chicken Fillets are pre-cooked and only need to be heated in the microwave. It makes for quick preparation, which in turn makes my tired, pregnant body extremely happy.
Because I live in the Southwest, I am drawn to the flavors and foods that are common here, so this variety of Birds Eye Protein Blend called to me. The quesadillas would have been yummy with just these two ingredients, but I decided to throw in some green chiles, stewed tomatoes, nacho cheese, and fajita seasoning for good measure. It tasted like culinary magic, yet it couldn’t have been easier to prepare. That’s my kind of meal.
I found both the chicken fillets and protein blends in the freezer section at my local Walmart.
I enjoyed dipping my quesadillas in extra cheese sauce and salsa. Mmmmmm!!! Then I cleaned up the chicken and veggie escapees with some tortilla chips, because I wouldn’t want to waste any of that goodness.
I know the title is a mouthful, but you’re going to want a mouthful of this stuff!
{SOUTHWEST FIESTA CHICKEN FAJITA QUESADILLAS}
3 Tyson Grilled & Ready Chicken Breast Fillets, cooked according to package directions
2 oz. chopped green chiles, drained
1/3 cup stewed tomatoes, drained and chopped
2 cups Birds Eye Protein Blends, Southwest Style
1 clove garlic
2 Tbsp. Fajita Seasoning from the packet
1/4 cup Salsa Con Queso (nacho cheese sauce)
Flour Tortillas
Warm your chicken breast fillets in the microwave according to package directions. Chop into small pieces.
In a skillet over medium high heat, stir together green chiles, stewed tomatoes, Birds Eye Protein Blends, and garlic until warmed through and liquid starts to simmer out.
Add your nacho cheese sauce, chicken pieces, and fajita seasoning to the pan. Stir together and allow to warm.
Then, place a big scoopful or two of the mixture on half of a tortilla and fold the second half over it. Place it on a hot skillet and cook, flipping until both sides are nicely browned and inside mixture is warmed through. That’s it!
So there you have it. A fiesta on a plate. A party in every bite. A colorful summer meal that’s sure to receive rave reviews at any dinner table.
