Valentine’s Monster Cookies

Share some Valentine’s Monster Cookies with those you care about to celebrate Love Day! These soft, chocolate-y cookies are loaded with goodness!

I look forward to Valentine’s Day each year because it’s a time allotted to celebrate those who are dear to my heart. I like to do something special for my kids. I typically make them a treat or put a surprise in their Valentine’s mailboxes. We have dinner in as a family on February 14th and my husband and I go out together before the big day to avoid the crowds.

All the pink and red treats are so fun and festive! I’ve always made it a point to celebrate Valentine’s Day, because it’s an excuse to show my friends and family how much I adore them and because, well, I’ll take any opportunity I can get to make yummy desserts. 🙂 And if you’ve followed along here for any amount of time, you’ll know very well that most of the treats I make involve some sort of chocolate, usually in large quantities. 🙂 Those are the best kind.

Because peanut butter and chocolate in a cookie is always a good idea (or at least that’s how I think), I combined them with oats, along with oodles of chocolate chips and festive M&M’s, to make something that is all sorts of delicious! Grab that glass of milk and enjoy!

Mmmmmmmm…….mmmmmmmmm……good!!!!!!!

I can’t wait to make these again for the kids as an after-school treat on Valentine’s Day!

Ingredients Method

Ingredients

  • 1 c. 2 sticks salted butter, softened
  • 3/4 c. light brown sugar packed
  • 3/4 c. granulated sugar
  • 2 tsp. vanilla extract
  • 2 large eggs
  • 1/2 c. creamy peanut butter
  • 1/4 tsp. salt
  • 3 c. all-purpose flour
  • 1 tsp. baking soda
  • 3/4 c. old fashioned oats
  • 3/4 c. semi-sweet chocolate chips
  • 3/4 c. Valentine's M&M's

Method

  1. Preheat oven to 350 degrees Fahrenheit.
  2. In the bowl of an electric mixer, cream together butter, brown sugar, granulated sugar, vanilla and eggs. Add peanut butter and mix.
  3. Add salt, flour, baking soda, and oats and mix until combined, scraping down the sides of the bowl with a spatula, as necessary. Mix in chocolate chips and M&M's.
  4. Form or scoop dough into 1 1/2" dough balls and place on a cookie sheet. Press dough balls down slightly with the palm of your hand. Press additional M&M's in the top, then bake for approximately 8 minutes. Don't over bake. Allow the cookies to cool for a few minutes on the pan before removing them to a cooling rack to cool completely.

What special ways do you celebrate Valentine’s Day? I’d love to hear!

The kids have already requested for me to make them again! I've been putting one in their lunch box every day and they can't get enough! :)
