What We Ate For Dinner Last Week

How is your meal planning going? Not only does meal planning save us money (because we’re not eating out too often or overspending at the grocery store), but it gets us together for family dinner each evening, which I think is the very best perk! I’ve noticed that the kids are more willing to talk about their day and what might be troubling them when it’s over a shared meal. There are so many benefits to eating as a family around the dinner table! I hope these meal plans give you helpful inspiration to make family dinner easier at your house!

Lately I’ve been cooking more from my own blog. There are so many treasures that are buried in the archives here on I Dig Pinterest that I’m bringing to the surface again! I hope you get to try them too!

Chicken Drumsticks. Our local supermarket sells drumsticks for super cheap certain times of the year! We literally only paid $2.00 for a huge package of them! When we saw that deal going, we knew it was going to be our dinner on Monday night! We seasoned them with Greek seasoning and baked to perfection and served with an easy rice side and fruit.

Sassy Tailgate Sandwiches. I had bought all of the ingredients for this to use for a party appetizer the week previous, and ended up bringing something else to the party, so we ate these for dinner instead! They were devoured in minutes! And I love that I could prep them earlier in the day when I had a minute and just pop them in to bake quickly when we were ready to eat. I served it with fruit and a green salad.

Cheesy Broccoli Bake. I hadn’t made this in a very long while and had forgotten just how tasty it is! Plus, it made great leftovers and I didn’t have to cook the next night! Hooray!

Fluffy Strawberry Pancakes. I made these without the strawberries, since we didn’t have any. It was Friday night and I didn’t feel like “cooking”, so we had breakfast for dinner! Everyone gobbled these right up! They are so easy to make too!

Homemade White Bread with an easy soup and salad. This bread is the best! When I spend time making bread, I like to keep the rest of the meal really simple.
