Easter White Chocolate Peanut Butter Crunch Bars

I think Easter desserts are just gorgeous!  These White Chocolate Peanut Butter Crunch Bars are both pretty and scrumptious! They combine two of my favorite things…white chocolate and peanut butter, and are made with Cap’n Crunch Cereal!This is a great recipe to enlist kids’ help too!  Let them count marshmallows, measure, stir, press and sprinkle.

They’re no-bake, and you won’t believe how fast they come together.  If you’re in need of dessert in a flash, say, to bring to an Easter party or an egg hunt, look no further!  These crunchy bars are sure to be a hit with kids and adults alike!
Have you tried White Chocolate M&M’s yet?  If not, you must!  They are phenomenal.  I’m not sure if they’re just a seasonal candy for Easter, but grab a few bags next time you’re out, just in case.
I used to eat Reese’s White Chocolate Peanut Butter Cups and was devastated when they stopped making them.  Those suckers were incredible.  These crunch bars are a perfect blend between those and a Scotcheroo.  The Cap’n Crunch gives them a wonderful texture, combined with the ooey gooey marshmallow/peanut butter sauce that melds them together.

 

Call me crazy, but I’m on a dessert-free diet for the month, and this treat almost led to my downfall. I did sneak a bite…shhhh don’t tell…but then I relied on the hubby for the final review.  Suffice it to say that his mind was blown.
He actually ate two, which is crazy coming from someone who likes his desserts in serious moderation.  Even one bite was enough to make me want to eat the entire pan, if it weren’t for my goal that I’m determined to reach.  Talk about a test! I must not cave, I must not cave…..
{EASTER WHITE CHOCOLATE 
PEANUT BUTTER CRUNCH BARS}
Adapted from Taste of Home
Makes 2 dozen
32 large marshmallows
3 Tbsp. butter
1/4 c. plus 1 Tbsp. peanut butter
6 cups Cap’n Crunch Cereal (the kind without berries)
1 pkg. (9.90 oz.) White Chocolate M&M’s
1/3 c. white chocolate chips
In a large saucepan, combine the marshmallows, butter and peanut butter.  Cook and stir over medium-low heat until melted.  Remove from the heat.  Stir in the cereal and half of the M&M’s.  Pat into a 13×9-in. pan coated with cooking spray.  Immediately sprinkle and press on the remaining half of the bag of M&M’s.  Melt white chocolate chips and drizzle over.  Let cool.  Cut into bars.  Best when eaten the first day.
I’ll certainly be making these in a few weeks when I’ve proved to myself that I have willpower.  Easter cannot come fast enough.  🙂
