My family has always been pasta-obsessed. We have it at least once a week, sometimes more. It’s one meal that my kids never complain about and always gobble right up. I’m pretty sure that we could never tire of pasta, but just in case it is a possibility, I like to prepare it a little different each time to keep things interesting. 🙂
As a mom, I feel a great responsibility to ensure that my growing kiddos are fed nutritious, wholesome meals. I’m always trying to sneak in vegetables however I can. I can’t say that they get super excited about eating the leafy greens, tomatoes and such, but they are much more likely to try them when I pair them with pasta and marinara sauce! Sometimes that little bit of corn or small piece of hidden zucchini might make its way into their mouths by accident and then they realize it isn’t so bad after all! 🙂
I grabbed everything I needed to make this yummy dinner at Walmart.

It’s also a good source of Fiber and ALA Omega-3. Plus, it tastes amazing! My kids gave it the ultimate stamp of approval by eating everything on their plates.
This pasta dish couldn’t be easier to prepare too! I’m all about simple meals, because there are always a million other things that need to get done in the evening, like taking kids to appointments and activities, helping them with homework, and trying to set aside a little time to be together as a family.
Start by slicing and dicing all those yummy, colorful veggies! Next, heat a skillet over the stove top, add about a Tablespoon of olive oil and one clove of minced garlic. Heat, while moving it around with a spatula, until it’s nice and fragrant.
Cook the Barilla ProteinPLUS Pasta according to package directions. Add those veggies to the pan and saute for a few minutes until they’re just slightly crisp or more on the tender side, if you prefer them that way, like me.
Stir in your favorite Barilla Marina sauce, stir for a few minutes until heated through, then add the chopped spinach and stir it in until it’s wilted.
Toss the sauce with the drained pasta and serve immediately. I topped mine with some pine nuts and grated parmesan. It was absolutely splendid!

Ingredients
- 1 Tbsp. olive oil
- 1 clove garlic, minced
- 1/2 large red bell pepper, diced
- 1 small zucchini or 1/2 large zucchini, sliced
- 1/2 cup each of red and yellow cherry tomatoes, cut in half
- 1/2 cup yellow corn kernels
- Salt and red pepper to taste
- 1 c. fresh spinach, roughly chopped
- 14.5 oz. Barilla ProteinPLUS Penne Pasta, cooked according to pkg. directions, then drained
- 24 oz. Barilla Marinara Sauce
- Pine nuts and parmesan for garnish, optional
Instructions
- Chop and dice all the veggies. Heat a large skillet over medium-high heat. Add olive oil and garlic and heat, while stirring, until fragrant. About one minute. Add red bell pepper, zucchini, corn, and tomatoes. Add salt and red pepper to taste. Stir while cooking until veggies reach desired tenderness. A few minutes is all it takes. Stir in Barilla Marinara Sauce and spinach. Stir over heat until sauce is warmed through and spinach leaves begin to wilt. Pour over pasta and toss to coat. Serve immediately, topped with pine nuts and parmesan, optional.
