Giant Chocolate Chip Cookie Birthday “Cake”

My kids are not big cake fans.  I’m not sure why, but for so many of their birthdays, I still made cake, and they would barely nibble it.  Which meant that I ended up with a delicious load of calories pretty much to myself, since my husband isn’t a big sweet eater.

I decided this year that I need to be more friendly to my figure on birthdays and to make something that the kids will actually enjoy eating.  In other words, I needed a way to share the calorie love.

Enter the giant cookie…the alternative for crazy kids who don’t eat cake.

 

One batch of cookie dough makes two of these, so the birthday boy got one all to himself.  It totally made his day.

To make your own Giant Cookie “Cakes”, whip up a batch of your favorite chocolate chip cookie dough, then spray two nine inch round cake pans.  Press dough into bottom and bake at 350 degrees for 17-18 minutes, or until edges are golden brown.

Below is one of my go-to chocolate chip cookie recipes.  It’s the one found on the back of the Nestle Tollhouse chocolate chip bags, just modified a bit.

 

{NESTLE TOLLHOUSE 
CHOCOLATE CHIP COOKIES}
 
2 1/4 c. flour
1 t. soda
3/4 t. salt
3/4 c. white sugar
3/4 c. brown sugar, packed tightly
1 stick butter
2 eggs
1 t. vanilla
1 bag chocolate chips
Chopped nuts (optional)
Stir together dry ingredients.  In the bowl of a mixer, add wet ingredients and cream.  Add dry ingredients and mix until just combined.  Stir in chocolate chips and nuts if desired.
**Note: If doubling, add double the flour called for plus 1/2 cup more flour.  If singling the batch, add about 1/4 c. more flour than called for.
**If making regular-sized cookies, lightly spray the cookie sheets, roll into walnut-sized balls, and bake at 375 for 8-10 minutes.
