Honey Gingerbread Loaf with Honey Pecan Glaze

Blast the Christmas carols and move to the beat while baking up a festive Honey Gingerbread Loaf with a Honey Pecan Glaze!
I’ve said this a lot lately, but this time of the year holds a special place in my heart.  I enjoy all the festivities and traditions that accompany it, along with the happy faces I see when I’m out and about and the general kindness that abounds.

 

My family and I will be visiting the River of Lights (a huge location with lots of Christmas light displays) in the coming week and we cannot wait.  Later in the month, we’ll be taking a magical ride on the Polar Express.  I love the holidays because I get to witness the sheer delight in my kids’ eyes that comes from exciting experiences and opportunities.
But I also look forward to December because it means loads of holiday baking!  I like to turn up the Christmas music and get caught up in my baking moment, and then of course share the goodness that results with neighbors and friends later.
This loaf is soft, moist and full of deep, rich holiday flavors, then finished off with a buttery, sweet and crunchy topping!  Mmmmmmm….!!!
I love substituting Don Victor honey in my baking for sugar.  It has such a concentrated, tasty sweetness that’s unmatched.  So that’s what I did with this Honey Gingerbread Loaf, and then I topped it with additional honey in the glaze.
I found Don Victor Honey in the Hispanic aisle at my local Walmart.

Don Victor also newly offers Extra Virgin Olive Oil and whipped honey in three flavor varieties: Cinnamon, Honey, and Caramel.  I speak from experience when I say, they are all so yummy!
Now let’s get started creating today’s wonderful bread!
{HONEY GINGERBREAD LOAF}
Yield: One 5 1/2″x9 1/2″ loaf
3/4 c. Don Victor Honey
3/4 c. butter, softened
2 eggs
3/4 c. molasses
1/2 c. boiling water
1 tsp. baking soda
2 3/4 c. all-purpose flour
2 tsp. baking powder
4 tsp. ground ginger
2 tsp. ground cinnamon
1/2 tsp. nutmeg
1/2 tsp. cloves
1/2 tsp. salt
Glaze:
1 Tbsp. Don Victor Honey
1/4 c. butter, melted
1/2 c. chopped pecans
1/4 c. powdered sugar
Boil water.  Add Don Victor Honey to the bowl of an electric mixer.  Hello gorgeous!  I love that it comes with a honeycomb nestled inside!  Cream together honey, butter, eggs and molasses.
Stir together soda, flour, baking powder, ginger, cinnamon, nutmeg, cloves, and salt.  Add to creamed mixture and mix until combined.

What a pretty batter!

Now add boiling water and mix until combined.

Spread batter in a greased 5 1/2″ x 9 1/2″ loaf pan and bake for approximately 50 minutes at 350 degrees Fahrenheit. or until toothpick inserted in the center comes out clean.  Let cool in pan for about 15 minutes, then remove to a cooling rack and let cool completely.
Prepare glaze by melting butter, then stirring in honey, powdered sugar, and chopped pecans.  Pour over bread and serve.  If preparing the bread ahead of time, wait to add topping until just before serving.
