Slow Cooker Creamy Chicken and Rice

This Slow Cooker Creamy Chicken and Rice is sure to become a family favorite! It’s so easy to make, with just a few ingredients! Dinner made simple!

Even though I technically have a schedule that’s more open right now, I still find myself looking for easy dinner solutions. This recipe is one that I’ve been making since my husband and I were first married, almost 15 years ago! We’ve added four kids to the mix during that time and I’m still going strong with this scrumptious slow cooker meal!

It’s a go-to, delicious dinner because I can throw all the ingredients in the crockpot in the morning and then not think about it until we are ready to eat! It’s kid-friendly, creamy, and oh-so yummy! Plus, it uses ingredients that you probably already have in your pantry!

Just prepare the rice about 20 minutes before it’s done and you’ve got a warm, flavorful bowl of goodness to enjoy around the table!

If you’re having a hard time finding fresh chicken, you can always use canned instead. In this case, rather than using the slow cooker, simply warm the sauce ingredients over the stove top and then stir in the drained canned chicken in the end, allowing it to warm for a little bit.

It’s hearty and so tasty!

Ingredients

  • 2 large chicken breasts
  • 1 8 oz. package cream cheese, softened
  • 1 envelope Italian dressing mix dry (.6 oz)
  • 1 can 10.5 oz Cream of Chicken Soup
  • 1 cup milk 2% or whole
  • 2 1/2 cups white rice cooked

Instructions

  • Spray the inside of the slow cooker with nonstick cooking spray.
  • Place the chicken breasts in the bottom of your slow cooker.
  • Mix the sauce ingredients (softened cream cheese, Italian dressing mix, cream of chicken soup and milk) together using a hand mixer or an electric mixer. Pour the sauce evenly over the chicken breasts.
  • Place the lid on the slow cooker and allow it to cook for 4-5 hours on high or 6-7 on low. When the chicken is cooked through, remove it from the slow cooker, shred it on a plate and stir it back into the mixture.
  • Serve over cooked white rice.

I hope your family enjoys this as much as we do!
