Strawberry Orange Stuffed French Toast: January Mystery Dish

This Strawberry Orange Stuffed French Toast is a fantastic stomach-filler any time of day…breakfast or not!  Just wait ’til you taste the surprise inside!

I made this one-of-a-kind French Toast for this month’s Mystery Dish Challenge.  The ingredient options were:
Champagne
Strawberries
Oranges
Beets
Filet Mignon
Lobster
Cream
Chocolate
Rosewater
Rice
I used three! My mind immediately jumped to breakfast foods when I saw this list.  I’m a firm believer in not skipping the most important meal of the day, but I don’t usually have time to make anything elaborate.  I’m lucky if I can scarf down a bowl of cereal before getting the kids ready to run out the door.  That being said, I’m never opposed to breakfast for dinner, or even the occasional brunch, especially if it’s in the name of something so yummy as today’s dish.

 

Have you ever had the pleasure of eating something so amazing that you just wanted to shout from the rooftops about the incredible experience?  Well this Strawberry Orange Stuffed French Toast will do that to you.
My sisters are usually the first to hear about my recipe successes.  I tend to text or call them on a daily basis about food.  They probably think I’m obnoxious, so this time I left them alone.  However, I was tempted to go on Facebook and pour out my heart about the exceptional culinary concoction I had just consumed.  I decided last minute that, that may be a little overboard, and settled for venting to my husband the second he walked in the door from work.  Lucky him.  🙂

 

This stuffed french toast is going to knock your socks off!  From the sweet and creamy strawberry filling with a hint of orange flavor, to the crusty cornflake and oatmeal topping, you will wholeheartedly pat yourself on the back for indulging.  Worth. Every. Calorie.
{STRAWBERRY ORANGE 
STUFFED FRENCH TOAST}
Recipe adapted from HERE
Filling:
4 oz. cream cheese, softened
1 c. sweetened whipped cream (the spray kind from the can)
2 Tbsp. mashed strawberries
1/4 tsp. orange zest
1 1/2 tsp. freshly-squeezed orange juice
1/2 Tbsp. sugar
1 c. diced strawberries
Egg Batter:
6 large eggs
1 Tbsp. ground cinnamon
1/4 tsp. nutmeg
2 Tbsp. sugar
1 tsp. vanilla extract
1 c. milk
Breading:
1 1/2 c. crushed cornflakes
1 c. oatmeal
4 thick slices challah, French, or Italian bread.  I used Italian.
In a medium bowl, stir together softened cream cheese, whipped cream, mashed strawberries, orange zest, orange juice, and sugar.  Fold in diced strawberries.  Place bowl in the refrigerator while you prepare the other portions.
For the egg batter, add the eggs, cinnamon, nutmeg, sugar, vanilla, and milk to a medium shallow bowl.  Beat with fork until eggs are broken up and well-mixed.  Set aside.
Prepare the breading by adding the crushed cornflakes and oatmeal to a large cookie sheet.
Cut bread into thick slices.  Make an incision on the crust side of the four pieces of bread about 3/4 of the way through.  You’re creating a pocket to stuff the cream cheese mixture into.
Gently spoon 1/4 of the cream cheese mixture into each of the four slices of bread and gently close the pocket.
Dip the bread slices into the egg batter, making sure to let each side soak for about 20 seconds.  Next, dip them into the cereal mixture.  Put a large skillet on medium-high heat and spray with butter spray or melt a little butter so toast won’t stick.  Add the stuffed bread slices and brown on each side for 2-3 minutes.
Remove from skillet, top with whipped cream, strawberry slices, syrup (for more sweetness) if you’d like, and serve immediately.

 

This would also make a perfect Valentine’s Day breakfast!

    It LOOKS worthy of every caloric bite! I am a firm believer in french toast, especially of the stuffed variety, and I give this a hearty oh yes!!! Must make this for breakfast asap, because Valentine's day is really too long to wait for.
