Sweet Onion & Sausage Stromboli: A Simple Meal Solution

Weeknight meals are made a cinch and totally yummy with this Sweet Onion and Sausage Stromboli that’s also loaded with peppers and cheese! It uses Campbell’s Soups for Easy Cooking and couldn’t be tastier!
For starters, I can’t get enough of those gorgeous colors!  But if you think those are nice, wait ’til you take a bite!  You’ll be hooked!
This month I’ve been sharing a few 30 minute meal ideas, including my Tex Mex Stuffed Shells, Chicken Portobello Tacos and then of course today’s recipe.  You really can’t go wrong with any of them.  Trust me when I say you’ll want to put them on your monthly dinner menu rotation!
I love using Campbell’s Soups for Easy Cooking in my recipe because, not only does it mean a quick meal, but it also translates into oodles of flavor! I appreciate that I don’t have to add a bunch of spices or other ingredients when I use them, because they are already seasoned to perfection!
Today’s treasure of a recipe calls for the Sweet Onion variety and I’m pretty sure you’re going to want to lick the measuring spoon while you’re putting it all together!  I’m just speaking from experience. 🙂

Mondays are definitely the craziest days at the I Dig Pinterest household.  I try to pack all my undesirable “weekly to-do’s” all in that day so I can have the rest of the week to enjoy.  So this means lots of time in the laundry room and a trip to the grocery store with bathroom wipe-downs in between.
All of this doesn’t leave much room to think about what we’ll fill our tummies with at dinnertime.  But not to worry, because this particular Monday evening, I simply pulled out a box of Campbell’s Sweet Onion Soup, a few other ingredients from my fridge, and whipped out the beautiful loaf stuffed with goodness shown above.  The hubby was completely impressed and mentioned how professional it looked.  Brownie points for him!
You too can cause the jaws to drop when you bring this stromboli to the table.  So hop to it!  🙂
{SWEET ONION & SAUSAGE STROMBOLI}
1/2 sweet onion, sliced
1/2 red, yellow, and green pepper, sliced
1/2 lb. Italian sausage, casings removed
2 Tbsp. Campbell’s Soups for Easy Cooking in Sweet Onion plus more for dipping
1 1/2 c. shredded mozzarella cheese, divided
2 refrigerated French Bread dough tubes (11 oz. each)
Preheat oven to 350 degrees Fahrenheit.
Begin by putting your sausage, onion, and peppers in a large skillet and cooking until meat is no longer pink and peppers are tender.  Drain excess fats.
Add 2 Tbsp. Campbell’s Sweet Onion Soup to the cooked meat mixture and stir to combine.

This cute little box can easily be found in the soup aisle at Walmart.  Get a great coupon for it HERE.  Coupon is valid for one month from 3/13/15.

Roll out your dough into a rectangle on the counter.   There will be two.

Divide the meat mixture between the two dough rectangles, leaving at least 1/2″ of space around the edges.

Sprinkle 3/4 c. mozzarella cheese on the top of each.

Now roll dough and filling up, jelly roll style, starting on a long side.  Pinch seams tightly together and place seam-side down on a greased cookie sheet.  Cut 1/4 slits in the top of the dough about 2 inches apart. This will allow ventilation.  These are not shown in the image above.  Bake at 350 for 26-30 minutes, or until golden brown.
To make this a 30 minute meal, simply put the filling mixture on only half the dough and then fold it over calzone style, pinching the seams.  Cut slits in the top, then, bake for 375 degrees Fahrenheit for 15-20 minutes. This method saves about 10 minutes because there won’t be dough in the center to worry about cooking.  Either way, it’s a totally tasty, easy dinner idea!
