Last week was crazy hectic with appointments, activities, family illness and commitments, so it was very difficult to be intentional about cooking dinner. However, I am pleased to announce that I still cooked four times! Sometimes you just have to focus on your wins and forget about your losses. 🙂 It was one of those weeks when life happened. But I’m picking myself back up and getting back at it this week!
I hope you give yourself a big pat on the back each night that you make the effort to cook! Because it’s a big deal and you deserve to be pleased about it!
Here’s what we had for dinner last week:
Instant Pot Tuscan Chicken. This is a family favorite! I reduce the spinach to 1 cup (because I know my kids would turn up their noses if I got greedy and added it all). I also reduce the cream cheese to 4 oz. and the grated parmesan to 1 c. It’s still super creamy and yummy without the extra calories. I use THIS Instant Pot.
Creamy White Chicken Chili. I added an extra 1 c. of chicken broth because I felt like it needed more liquid. I also added 1 can of drained yellow sweet corn. So yummy!
Waffles. My family loves breakfast for dinner! And it’s so easy! These homemade waffles are a staple at our house!
Chicken Fajitas. I used the recipe linked, except I cut the chicken into chunks and didn’t pre-marinate it. I cooked everything in a skillet instead of baking it. If you’re going this route, add the sliced bell peppers and onions to the olive oil and garlic in the skillet over the stove top on medium heat. Let those soften a bit, then add your chicken chunks, seasonings, and cook the chicken through. Serve in warm flour tortillas with your favorite toppings.
