Butterfinger Cookies

These perfectly soft cookies, infused with Butterfinger Candy Bar Pieces will wow you!  Made with a yummy chocolate chip cookie dough, but modified with Butterfinger baking bits, these handheld delights are addicting!  You’ve been warned!

Since I started this blog over three years ago (wow!) I’ve been taking a mental note of what my followers like the most as far as desserts are concerned.  The general consensus seems to be cookies, cookies and more cookies!
In fact I received an email the other day from a wonderful reader saying that she had just made these scrumptious Marshmallow Surprise Cookies and what a hit they were.
I love getting happy mail from you guys!  Especially when it’s about recipes that have been a success in your home.
I have to say that I’m super glad y’all like cookies (pardon my Texas accent, I’ve been watching a little too much Fixer Upper lately), because they just so happen to be one of my favorite things in the world!
I’ll take a cookie any day over a piece of cake.  Not that I don’t love cake.  There’s just something so amazing about cookies, and I’m always in the mood, especially if it’s the soft and chewy variety like today’s recipe provides.
I enjoy experimenting in the kitchen with different cookie doughs and observing how the height, texture and taste varies in the outcome of each.  I’ve got some adorable little taste testers who never complain when I run these tasty “tests” in my lab.
Last week, my father-in-law came to visit and he and my hubby and the oldest two kids hit the ski slopes for the weekend.The baby went down for a long nap and my little girl begged to make cookies.

Ok, fine.  Twist my arm.

So this is what we came up with!  We were big fans.

 
{BUTTERFINGER COOKIES}
Inspired by this recipe from Center Cut Cook
Makes about 22 cookies

1/2 c. (1 stick) butter, softened
1/2 c. brown sugar
1/4 c. white sugar
1 large egg
1 1/4 tsp. vanilla
1 3/4 c. all-purpose flour
1/2 tsp. baking soda
1/4 tsp. salt
1 Tbsp. corn starch
1/2 c. Butterfinger Baking Bits, plus 1/2 c. more for rolling

Preheat oven to 350 degrees Fahrenheit.  In the bowl of an electric mixer, cream together butter, brown sugar, white sugar, egg and vanilla.  Add flour, baking soda, salt and corn starch to the bowl and mix until combined.  Stir in 1/2 c. Butterfinger Baking Bits.  Roll (or use an ice cream scoop to form) 1 1/2″ balls.  Roll balls in additional Butterfinger Baking Bits, pressing the bits into the dough.  Place on a greased cookie sheet or one that’s been lined with a nonstick baking mat.  Press each dough ball down slightly with the palm of your hand.  Bake for 7 to 8 minutes.  Let sit on pan for a few minutes before removing to a cooling rack to cool completely.  Store in an air tight container.

I just had to take a big bite.  Oh, the things I do for research purposes.  🙂
