If you follow me on Instagram you probably witnessed the photo overload of our family vacation to Disneyland and the Grand Canyon. We had such a great time and made so many memories. We spent two and a half days in Disneyland and then made a seven hour evening drive to Flagstaff, Arizona where we stayed in the cutest little cabin. The following morning, we visited Slide Rock in Sedona. The kids and their dad were brave enough to enter the freezing water to experience the beautiful natural water slides there while I happily watched from the sidelines. 🙂
We spent our last day in the Grand Canyon where we did a little hiking, but mostly just took in the beautiful, breathtaking views. If you ever get the chance to go there, do it! It was absolutely incredible! We’ve already made a bucket list of things we’d like to do on our next trip to the area.
As much as I enjoy escaping everyday life for a brief period, it’s always nice to be back home in my own bed and back to my normal routine. We spent so many hours in the car, we nearly lost track of the count. 🙂 Suffice it to say, it was way too many. Vacations are so much fun, but they are extremely exhausting, especially with four kids in tow!
So now that we’re back and I’m in full-on catchup mode, I figured I deserved a big pat on the back. The laundry is never-ending! Plus, Mother’s Day is just around the corner, so this was my gift to myself. 🙂

I love to unwind at the end of a long day with a yummy snack while watching my favorite chick flick. I just finished the TV series When Calls the Heart. Have you seen it? It’s a super sappy, but ridiculously adorable love story. Those are the best kind. 🙂
The evening just wouldn’t have been complete without these phenomenal Bacon-Wrapped Jalapeño Peppers! Because everything tastes better in bite-sized form, am I right? 🙂
I’m a sucker for sweet and savory concoctions, so I decided to throw in some fresh pineapple chunks with some Pepper Jack cheese and Farm Rich Jalapeño Peppers, made with 100% real cream cheese. And then I just had to wrap them in bacon, because, why not? 🙂
They came together in a snap, which is a good thing, because I certainly didn’t feel like slaving away in the kitchen after that tiresome ride home.
I dipped them in a yummy store-bought Roasted Pineapple Jabanero Sauce, which perfectly complemented the flavors.
I love Farm Rich snacks because they’re quick-frozen and carefully packaged so they bake up in just minutes! Something I totally appreciate as a busy mom. I love when easy meets tasty!
Bacon-Wrapped Jalapeño Peppers
Ingredients
- 1 package 18 oz Farm Rich Jalapeño Peppers
- Pepper Jack Cheese sliced into small rectangles
- Fresh Pineapple slices
- 1 pkg. Thick-Sliced quality bacon
- Toothpicks
- Fruit Salsa or fruit dipping sauce I used Roasted Pineapple Jabanero Sauce, optional
Instructions
- Instructions: Preheat oven to 450 degrees Fahrenheit. Assemble Jalapeño Peppers by placing a slice of cheese and a pineapple slice on each Farm Rich Jalapeño Pepper. Remove bacon from package, cut in half and wrap around, seam side facing down. Stick a toothpick through, taking care, since Jalapeño Peppers will be frozen. Place on a baking sheet.
- Bake for approximately 14 minutes, or until bacon is cooked and Jalapeño Peppers are completely warmed through. Serve immediately with fruit salsa or dipping sauce.
These are just what this mom needed after a fun-filled, but exhausting family vacation!
