Carrot Cake Krispies Treats

If you’re a Rice Krispies treats lover and a fan of carrot cake, you’re going to flip for these Carrot Cake Krispies Treats! There’s a burst of spring time and Easter in every bite!

Ever since I shared my favorite recipe for an original, to-die-for Carrot Cake around when this blog began, I’ve done my best to bring you a unique take on carrot cake each year after that.

From Carrot Cake Mini Trifles to Blueberry Carrot Cake Muffins, there are plenty of ways to get your carrot cake fix here! These Carrot Cake Cookies were a smashing hit back in 2016 and still are to this day.  I think it’s safe to say you all love your carrot cake, just like me!

It just wouldn’t be Easter time or spring time without a hefty dose of carrot cake, at least that’s how I feel! Are you the same way?

I’ve always wanted to receive recipe inspiration in my dreams, and I’m excited to announce that the other night it happened! It was the coolest thing. I was sleeping deeply and these Carrot Cake Krispies danced their way into my head. I couldn’t wait to wake up and make them!

I’ve heard that comedians often keep a pen and pad of paper on their night stand so they can jot down ideas that come to them in the wee hours. Well apparently food bloggers need to do the same. 🙂 For some, the best inspiration comes while in the shower. Well for me, it’s in my dreams. Ha!

I can tell you with certainty that real Carrot Cake Krispies Treats are even better than dream Carrot Cake Krispies Treats! I was really savoring them in my sleep, but actually having these delightful things in my mouth was a heavenly experience that I won’t soon forget.

Why not combine two classic favorite desserts into one? I grabbed a carrot cake mix and made up some of the yummiest, thickest rice krispies treats on the planet! They’re complete with the most incredible carrot cake mix-infused cream cheese frosting! You won’t want to miss out on the experience of devouring these treasures!

My husband is convinced that I’m trying to sabotage his diet because every time he comes home, I shove a new sweet treat in his face and ask him his opinion. I have to preface this next part with a disclaimer because he doesn’t typically go crazy over any dessert, no matter how delicious it is. He’s more of a savory food kind of guy. So when he told me he could literally eat the entire pan of these in one sitting, I knew these were better than amazing!

Carrot Cake Krispies Treats

Ingredients

  • 6 Tbsp. butter
  • 8 c. crispy rice cereal
  • 6 c. mini marshmallows
  • 1 1/2 tsp. vanilla extract
  • 1/2 c. carrot cake mix (dry)
  • Frosting:
  • 8 oz. cream cheese, softened well but not melted
  • 1 tsp. vanilla extract
  • 1 c. powdered sugar
  • 1/4 c. carrot cake mix (dry)

Instructions

  1. *Pre-measure all ingredients and have them ready before starting. Grease or prepare a 9x13" baking pan by spraying it with nonstick cooking spray.
  2. For the rice krispies base, in a large pan over medium-low heat, melt butter. Add marshmallows and stir constantly over the heat until they're all the way melted. Stir in 1 1/2 tsp. vanilla and 1/2 c. carrot cake mix until smooth. Working quickly, add crispy rice cereal and stir to fully incorporate the melted marshmallow mixture throughout. Press into prepared pan and let set.
  3. Prepare the frosting by mixing together cream cheese, vanilla and powdered sugar in the bowl of an electric mixer until smooth and creamy. Add 1/4 c. carrot cake mix and mix until completely combined and creamy. Spread over treats. Let the frosting set for a bit, then slice into squares and serve.

Yes, Rice Krispies Treats are phenomenal on their own, but are even better with frosting!

I dare you to stop at just one! These things are SO addicting! Enjoy!
