I used my Chewy Brownie Cookies as a base and then swapped a few things, so I’m going to send you to that post for the full recipe. Simply use 2/3 c. softened butter instead of the shortening and then stir in as much Andes Peppermint Crunch Baking Chips as your heart desires in place of the chocolate chips! Don’t be shy about it, though. They add a wonderful flavor and texture! Bake according to directions on recipe.
These are a perfect homemade gift for neighbors and friends, and they can be made in a flash! They soften even more after being in an air-tight container. All the goodness of a brownie, but in a quicker, more munchable form!
