Chocolate S’mores Cookies

What’s more summer than Chocolate S’mores Cookies? These cookies are sure to become a warm weather favorite treat! 

Last week the kids finished school and so we celebrated by sleeping out in the yard in the tent and making s’mores over the campfire. One night of sleeping into the tent turned into three. 🙂 Luckily, my husband and I had purchased cots, or we probably wouldn’t have agreed to it. 

We all look forward to s’mores in the summer time! It doesn’t matter if we’re camping in our yard or in the wilderness, there’s just something about chocolate, roasted marshmallow and graham crackers that is pure heaven when combined! Don’t you agree?

But for those times when we don’t feel like making a campfire, but we still need to get our s’mores fix, there’s Chocolate S’mores Cookies! These cookies are soft and so chocolatey good with graham cracker pieces and mini marshmallows on top. 

I melted chocolate for the cookie dough and then stirred in extra chocolate chips. Feel free to add your favorite type of chocolate. 

Do you love your campfire marshmallows to be toasty and golden brown or on the burnt side? I love mine to be golden brown! And the gooier the better! I suppose you could broil the cookies until the marshmallows on top turn brown, if you’d like. But we thought they were perfect just like this!

My love of s’mores runs deep! It’s pretty obvious by the fact that I post one or two s’mores dessert recipes each summer. If you’re obsessed about s’mores like I am, you have to also try this S’mores Brownie Pie, these S’mores Brownies, these S’mores Cookie Bars, these S’mores Chocolate Chunk Cookies and these Brownie S’mores Creme Sandwiches. SO good! 

I don’t think I’ll ever tire of s’mores desserts! I need them all summer long! Every summer gathering needs these cookies! It just doesn’t get better than this! These will satisfy your chocolate craving in the best way!

Chocolate S’mores Cookies

Ingredients Method

Ingredients
  

  • 1 c. salted butter softened
  • 1 c. light brown sugar packed
  • 1/2 c. granulated sugar
  • 2 large eggs
  • 2 tsp. vanilla extract
  • 1 c. semi-sweet chocolate chips melted
  • 2 1/4 c. all-purpose flour
  • 1/2 c. baking cocoa
  • 1/2 tsp. salt
  • 1 tsp. baking soda
  • 1 c. semi-sweet or milk chocolate chips
  • 1 c. coarsely-chopped graham crackers
  • Press 2-3 mini white marshmallows in the tops of the cookies once baked

Method
 

  1. Preheat the oven to 350 degrees Fahrenheit and line cookie sheets with nonstick baking mats or lightly spray with nonstick baking spray.
  2. In the bowl of an electric mixer, cream together softened butter, brown sugar, granulated sugar, eggs, and vanilla extract.
  3. Add in melted chocolate and mix until combined.
  4. In a separate bowl, whisk together flour, baking cocoa, salt and baking soda.
  5. Add flour mixture to wet mixture and mix just until combined, scraping down the sides in between.
  6. Stir in 1 c. semi-sweet or milk chocolate chips and graham cracker pieces.
  7. Scoop or roll into rounded 1 1/2" balls and place at least 2" apart on prepared cookie sheets
  8. Bake for 8 minutes, then remove and immediately press 2 to 3 mini white marshmallows into the tops of the hot cookies. Allow the cookies to cool for a few minutes on the sheets, then carefully remove them to a cooling rack to cool completely. Store in an air tight container once cool.
