How’s your summer going so far? We are having a wonderful one! I love when the kids are home. Whether we have fun plans or are just hanging out at home, it’s so nice to spend lots of time with them, enjoying the sunshine and lots of free time!
At least once a week, we like to make a homemade treat to enjoy. I ask the kids for recommendations and they take turns helping me make the dessert. The other day, we made a boxed brownie mix for the first time in years and I couldn’t believe that my oldest daughter had never made brownies from a mix! Most of our desserts are made totally from scratch, so I was floored to discover that she’d never made brownies the easiest way. ๐ Total oversight on my part.
I shared this recipe here on the blog many years ago when I first started this little space on the internet. I thought it was worth a re-share with new photos and a slight change to the recipe. The deliciousness factor remains unchanged. They are so gooey-amazing!
The bottom layer consists of a yellow cake mix and a few add-ins. Then, you spread a sweetened cream cheese layer over that and bake it just until it’s set. The top will get all flaky and pretty. Promise me you’ll top these with a nice scoop of vanilla ice cream, ok? They’re totally yummy without, but even better with the ice cream. You won’t be sorry!

I love a good cake bar, especially when it’s topped with a sweet cheesecake-type layer that just melts in your mouth! I’m telling you, the texture on these is incredible! The hardest part of preparing them is waiting for them to cool. ๐ They’re that type of treat that you just can’t wait to dig right in!

Yields Makes one 9"x13" pan

Ingredients
- 1 box yellow cake mix (15.25 oz; I used Duncan Hines)
- 1/2 cup (1 stick) butter, melted
- 1 tsp. vanilla extract
- 3 large eggs, divided
- 8 oz. cream cheese, softened
- 4 cups (1 lb.) powdered sugar
Instructions
- Preheat the oven to 300 degrees Fahrenheit and spray a 9"ร13" baking dish with cooking spray.
- In the bowl of an electric mixer, mix cake mix, melted butter, vanilla extract and one egg to form a soft dough.
- Press/spread dough evenly into the bottom of the greased pan.
- Mix powdered sugar, softened cream cheese and remaining two eggs until smooth, about 1-2 minutes, scraping down the sides with a spatula in between.
- Pour on top of crust. Bake for 35 to 45 minutes, or just until set. Mine were done in 37 minutes. The top will get crackly and poofy and then settle down as it cools.
- Allow it to cool completely at room temperature, then slice and serve with a scoop of vanilla ice cream on each piece.
