Hamburger Hash Brown Casserole

If you’re tired and need an easy, no fuss meal, this Hamburger Hash Brown Casserole is just the thing! The whole family will love it!

I have a few picky kiddos who always complain when they have to eat their veggies. So I thought I’d be in for a fight when I served this casserole for dinner last week. To my complete shock, my one son said he actually didn’t mind the vegetables being there and in fact didn’t even notice them. He proceeded to clean his entire plate and tell me that he hoped I would make this again. I felt like I’d just won the lottery!  🙂

I love how easy casseroles are to make. I’m also a huge fan of comfort food. I grew up on casseroles, so my kids are no strangers to them. When you put a hodge-podge of delicious ingredients together, you just can’t go wrong! Plus…there’s cheese!

This delicious concoction consists of layers of ground beef, frozen veggies, then cheesy hash browns followed by shredded cheddar. It comes together in a hurry and brings all the smiles at the dinner table!

My kids agreed that they veggies are much more palatable when they’re included in the recipe rather than eaten alone. I’ll be making casseroles until the day they leave home just so they can get those important nutrients! 🙂

I feel like today’s recipe tastes like a cross between Cheesy Funeral Potatoes and Shepherd’s Pie, which are two very tasty things to combine! This is dinner made easy. This is dinner made so delicious! Even my picky eaters approved!

For this recipe, you’ll use an 8″x8″ baking dish. You’ll also need a large skillet. 

Hamburger Hash Brown Casserole

Ingredients
  

  • 1 lb ground beef
  • 2 tsp. minced garlic
  • 6 oz. frozen veggies I used a variety with carrots, beans, corn and peas
  • 13 oz. hashbrowns frozen (or thaw them first if you want it to cook faster)
  • 10.75 oz cheddar cheese condensed soup
  • 1/2 c. sour cream full fat
  • 1/4 tsp. onion powder
  • Salt and pepper to taste
  • 1 1/2 c. shredded cheddar cheese

Instructions
 

  • Preheat oven to 350 degrees Fahrenheit.
  • In a skillet or dutch oven over the stove top, cook and crumble ground beef with minced garlic. Salt and pepper the meat as you're cooking and crumbling it. Cook until it's no longer pink. Drain grease if there is any.
  • Transfer cooked hamburger to the bottom of an 8"x8" baking dish. Pour frozen veggies evenly over the top of the hamburger.
  • In a large bowl, stir together frozen hash browns (or thawed), cheddar cheese condensed soup, sour cream, onion powder and salt and pepper to taste (1/4 to 1/2 tsp. salt). Spread the hash brown mixture over the veggies. Sprinkle with shredded cheddar, cover with foil and bake until completely warmed through, about 55-60 minutes if potatoes are frozen and less (around 35-40 minutes) if they're thawed. Remove the foil and return it to the oven for a few minutes so the cheese can fully melt on top. Serve and enjoy!

    I make something similar but with tater tots, good to know it works with shredded hasbrowns too.

      Oh yum! I bet this would be great with tater tots too! Yes, it's fantastic with hashbrowns!
