How are you doing? How is meal planning and prepping going for you? I have to admit, I feel a little burnt out by the end of the week, with cooking. I told my husband yesterday that I feel like all I do lately is cook and clean it up. 🙂 Sometimes cooking can feel monotonous. Which is why I try to keep the meals interesting, yummy and simple! Enter grilling, instant pot, and skillet meals! If you’re like me and feel exhausted at times with the constant cooking, just know that you are amazing! You can do this! Eating well is worth it. And I’m sure your family appreciates it, at least they’d better. 🙂
Here’s what we ate for dinner last week:
Brisket Sandwiches: We’d grilled a big brisket the week before and frozen it in meal portions, so this dinner was easy! And so yummy!
Chicken Fajita Rice Skillet Meal: This new recipe is so easy and yummy! Everyone loved it!
Copycat McMuffins: These are so easy! Simply cook some sausage patties and eggs (we cook our eggs in sheets so they’re more authentic), top with cheese and make into a sandwich on toasted English muffins.
Instant Pot Tuscan Chicken Pasta: This is a favorite that we make again and again!
Grilled Pork Chops with a Rice Side. So easy and yummy!
Smoked Brisket with Rolls, pasta with olive oil and pesto seasoning, and a salad kit: This was our Sunday dinner. So delish!
